This quick and tasty pasta dish is always a winner in our house and regularly on the menu. Keep it simple for the fussy eaters or bulk it up with extra flavour and veggies.
Serves 4
Ingredients:
- 250g bowtie pasta (or pasta of choice)
- 250g diced ham (or bacon)
- 1 tablespoon of dried Italian Herbs
- 1 cup of steamed broccoli
- 250ml Philadelphia Cream for Cooking Lite
- 2 egg yolks
- 1 cup Parmesan Cheese
- Salt & Pepper to taste
Method:
- Cook pasta as per packet directions in salted boiling water.
- Heat 1 tablespoon of olive oil in a pan and fry ham until browned. Set aside on a paper towel to absorb excess oil.
- Steam broccoli until just cooked.
- Separate eggs and place egg yolks, cream, and half the cheese in a jug, whisk until combined.
- Place cooked pasta, bacon, broccoli, and cream mixture in a pan on low heat and stir until combined. Season with salt and pepper.
- Divide between 4 bowls and top with remaining cheese.
Notes:
- Add as many extra vegetables as you like to the dish, cherry tomatoes, peas, or cauliflower would work well.
- For extra flavour add some dried chilli flakes or top with fresh parsley or basil.
- For a healthier option use chickpea or wholemeal pasta.
